Hilltown No.1 (Collector's Grade)
Tea Leaves
A blend of 2019 Northern Vietnam tea leaves and Guangxi large-leaf cultivar (Gui Qing), carefully selected for depth, balance, and ageing potential.
Fermentation
- Fermented in Ipoh, Malaysia (the "Hilltown") in 2023.
- Crafted by fermentation master Mr. Ng Shu Long.
- Produced using a low-temperature, low-humidity, extended piling fermentation process lasting 106 days, followed by approximately 2½ years of tea cellar ageing.
Tasting Notes
The liquor offers the richness of a ripe Pu-erh while retaining a subtle liveliness reminiscent of a raw Pu-erh, creating a distinctive balance between the two styles. Smooth, full-bodied and velvety, it delivers a lingering sweetness, remarkable depth, delicate pine-smoke notes, and a layered, expressive finish.
The extended fermentation and careful cellar ageing further enhance its silky texture and rounded character, softening youthful astringency while developing a richer, more harmonious flavour profile.
Characteristics After Fermentation
- The natural transformation of tea polyphenols and catechins significantly reduces bitterness and astringency, resulting in a smoother, gentler cup.
- Fresh grassy notes gradually evolve into mature aromas of aged wood, dried dates, and a subtle betel nut fragrance, hallmarks of a well-fermented tea.
- Increased levels of natural polysaccharides and pectin contribute to a thicker, silkier mouthfeel, natural sweetness, and excellent endurance through multiple infusions.
